Understanding Food Additives

From The Centre for Industry Education Collaboration (CIEC), this booklet is the forerunner of its Understanding Food Additives web site. The booklet contains information on a range of food additives and extensive suggestions for practical activities to investigate food and food additives.

Food additives described in the booklet include:
* Acidulants
* Anti-caking agents
* Antioxidants
* Colours
* Emulsifiers
* Flavourings
* Gelling agents, thickeners and stabilisers
* Preservatives
* Sweeteners.

There are also sections on safety and regulation of food additives, food allergy and intolerance and a glossary of E-numbers.
